Among the many steps you can but need not undertake at the end of your harvest season, planting cover crops is among the most important in solving a variety of garden problems. After your regular season harvest, choose a bean, peas, or some other cold-resistant plant to prevent soil erosion and add organic matter to your soil. Legumes in particular are great because they are nitrogen-fixing, actually pulling nitrogen out of the air to fertilize themselves and by extension your soil when you till the plants under for the following season.

BREAK UP THE SOIL
If you have problems with certain insects in your garden, you might be able to reduce their numbers by breaking up the soil down to around half a foot, thereby exposing eggs and larvae to birds and other helpful mouths. Do this after you have pulled up that year's plants and just before laying down a winter mulch.
